Seafood Sessions: Acadian Wild Atlantic Sturgeon Caviar with Chef Alex Tung

Every Thursday during happy hour we feature a different Ocean Wise seafood or shellfish and we invite our local fishermen and women, shellfish farmers, and seafood experts in to share some stories and tricks of the trade over a drink and some happy hour snacks.

On Thursday, July 25th, Alex Tung the Canadian Chef Brand Ambassador for Acadian Sturgeon and Caviar, will be at Coquille to share his passion for this prehistoric fish. Their Acadian Wild Caviar comes from Bay of Fundy Atlantic sturgeon (Acipenser oxyrhynchus) and is harvested during the migration up the Saint John River. The caviar is processed in a state-of-the-art Canadian Food Inspection Agency inspected processing plant in Carters Point, NB using the standardized malassol (low salt) technique. With egg size similar to sevruga, this caviar has an exquisite taste (buttery, nutty, umami) and will delight both caviar connoisseurs and first timers! Certified Ocean Wise, Acadian Wild Atlantic Sturgeon Caviar is the only sustainable and legal wild sturgeon caviar in the world.

Seafood Sessions: Lingcod with Chef de Partie, Tiaan

Every Thursday during happy hour we feature a different Ocean Wise seafood or shellfish and have a seafood expert share some stories and tricks of the trade over a drink and some happy hour snacks.

On Thursday, July 18 our Chef de Partie, Tiaan, will be hosting Seafood Sessions and highlighting one of his favourite fish to cook-the lingcod. This fish is found off the coast of North America and dwell deep in the ocean close to rocks. It’s latin name, Ophiodon elongatus, means long-toothed snake, which is quite fitting for its peculiar appearance. Don’t let its looks deceive you-lingcod is very tasty! This fish is known for its tender meat and mild flavour, which makes for a great pairing with strong flavoured, aromatic sauces such as the harissa vinaigrette on our lingcod dish.

Ocean Wise Toast to the Coast 2019 at the Vancouver Aquarium

Ocean Wise will be hosting their 13th Annual Toast to the Coast at the Vancouver Aquarium on Friday, July 12th with a unique culinary adventure in support of a good cause. Along with other local restaurants our team will be cooking up some gourmet seafood bites, while B.C. wineries and breweries will be there offering some homegrown wine and beer to pair. Guests will also have the opportunity to win exciting prizes through the silent auction.

All proceeds from the event will support Ocean Wise’s research, education and direct action initiatives to improve the health of our oceans.

Seafood Sessions: Geoduck with Malindi Taylor of Taylor Shellfish Farms

Every Thursday during happy hour we feature a different Ocean Wise seafood or shellfish and we invite our local fishermen and women, shellfish farmers, and seafood experts in to share some stories and tricks of the trade over a drink and some happy hour snacks.

Malindi hails from a long line of shellfish farmers, dating back to the 1890s. Located in Puget Sound, Washington, Taylor Shellfish is a leader in the sustainable shellfish farming industry, along with their sister company, Fanny Bay Oysters, here in British Columbia. Malindi will be here to talk about the ‘King of Clams’; the geoduck {pronounced gooey-duck}! Geoduck is a Nisqually word that means 'dig deep'.

Geoducks are native to the Pacific Northwest and are known for their large siphons, as well as their delicate flavour. They are the largest burrowing clams species in the world and also have a long life expectancy. The largest on record was 16 lbs and over 160 years old!

Join Malindi and our crew on July 11th to taste this sweet, soft-shell clam and learn more about this fascinating creature.

There are thousands of different types of clams around the world. Of the many different varieties, there are two general categories; hard-shell and soft-shell clams. Greg will be here to talk about quahogs, with a focus on littleneck clams, which fall under the hard-shell category. Littlenecks are one of the smallest of the quahog family. Although small, they pack a lot of great flavour! Come join us to learn about these little molluscs, while our team prepares some complimentary happy hour bites.

Join us on Thursday, June 27th with special guest and co-host David Goudge, Proprietor of Sea Star Vineyards on Pender Island. He’ll be pouring their ‘Salish Sea’-a blend of Ortega and Siegerrebe. The name is a celebration of it’s distinctive terroir and the beautiful waters that surround their vineyards. ‘Salish Sea’ is a bright, expressive white wine with notes of melon, grapefruit, peach, guava, and herbs. It also makes for a beautiful pairing with fresh oysters on the half shell. Our team will be shucking oysters alongside, David, and discussing the differences between east and west coast oysters, and the regional conditions that influence their shape, texture, and flavour.

For this edition of Seafood Sessions, we are thrilled to have our partners from Ocean Wise, Claire & Tania, joining us at Coquille to share their knowledge and expertise with our guests. Ocean Wise is an organization committed to educating and encouraging consumers to make sustainable seafood choices to ensure healthy oceans for future generations to come.

The star this week is a local, sustainably farmed crustacean: Pacific White-Legged shrimp from Berezan Shrimp Company. This species of shrimp is native to the Southwest Pacific Ocean. Due to the threat of over-fishing, this species of shrimp has the highest rate of aquafarming worldwide. Berezan is passionate about protecting natural eco-systems and has built an inland, closed-containment farm in Langley, B.C. with an aim to be an environmentally friendly, non-ocean impacting source for quality seafood.

We’ll be heading to Vancouver Island in June for the annual BC Seafood Festival! Comox Valley is a major hub for shellfish in British Columbia and a perfect destination for a bonafide seafood celebration. Chef Lee will be cooking at the festival’s signature event-the Gala Dinner on Friday, June 14th set in Filberg Heritage Lodge and Park. The Gala is an interactive dinner with some of Western Canada’s top chefs and seafood producers offering a variety of tasting stations.

Founded in 2016, Coastline Market is an online seafood marketplace that serves as a means to connect fishers, harvesters, and aquaculture farms directly to restaurants and retail buyers around the world to reduce the amount of hands that it passes through before it makes it to the end consumer. Coastline Market was established with the aim to increase quality and transparency in the seafood that reaches our tables.

Robert Kirstiuk, Co-Founder/CEO of Coastline Market and recipient of the Forbes 30 under 30, will be showcasing one of the many products that they work with-the Pacific Halibut. Halibut thrive in our native B.C. waters, particularly near the misty islands of Haida Gwaii. They are known for their peculiar appearance and their impressive camouflage skills that hide them from predators and prey. This Ocean Wise recommended fish is highly regarded and coveted because of it’s delicate, sweet flavour, snow-white colour, and firm flaky meat. Halibut is predominantly caught using bottom lines and the commercial halibut fishery is quite selective in the fish it catches.

In January, we had the pleasure of having Chef Jason McLeod of Ironside Fish & Oyster in San Diego join us at Coquille for the Dine Out Vancouver World Chef Exchange. Now it’s time for Coquille to go South! Chef Lee will be heading to San Diego in June to team up with McLeod for his Chef’s Catch Dinner Series. Together they will host two collaboration dinners, one on June 4 and one on June 5. They’ll be shopping the local Tuna Harbor market to prepare a unique seafood menu.

Join us on Thursday, May 30th to learn all about the giant Pacific octopus. Our Sous Chef Mygem will be sharing some interesting facts about this awe-inspiring sea creature, as well as offering some tips on how to prepare and serve it.

The giant Pacific octopus is known for it’s grandeur, intelligence, and is known as a master of camouflage. It is a demersal cephalopod that is locally sourced, typically inhabiting the shallow coastal waters of British Columbia and Alaska. Octopus is a versatile seafood that takes well to both hot and cold preparations. You can find it grilled on our happy hour menu, and served as a carpaccio on our lunch and dinner menus.

Less than a decade ago 90% of our local spot prawns were shipped overseas with very little left in our own market. Steve successfully championed with the Chefs Tables Society of BC to bring spot prawns back to our dinner tables.
