Seafood Sessions: Lingcod with Chef de Partie, Tiaan

Every Thursday during happy hour we feature a different Ocean Wise seafood or shellfish and have a seafood expert share some stories and tricks of the trade over a drink and some happy hour snacks.

On Thursday, July 18 our Chef de Partie, Tiaan, will be hosting Seafood Sessions and highlighting one of his favourite fish to cook-the lingcod. This fish is found off the coast of North America and dwell deep in the ocean close to rocks. It’s latin name, Ophiodon elongatus, means long-toothed snake, which is quite fitting for its peculiar appearance. Don’t let its looks deceive you-lingcod is very tasty! This fish is known for its tender meat and mild flavour, which makes for a great pairing with strong flavoured, aromatic sauces such as the harissa vinaigrette on our lingcod dish.
